Granite and granitic sands. 30 year old, gobelet trained vines, trellised along stakes in the traditional fashion. Southeast facing slopes with good wind exposure. Grapes harvested by hand at optimal maturity.

Ageing is carried out on the fermentation lees, in 600 litre
casks, for 7 months. Blending and ageing are completed in stainless steel tanks to preserve the wine’s mineral expression.

Michel describes his wine to Yannick

First of all, I notice notes of white flowers and peaches on the nose and a delicacy underpinned by a smoky minerality. On the palate, the mineral tension is emphasized by floral flavours. The ageing is smooth and powerful. The finish is salty and honed by fine bitters.
